Gluten Free Peanut Butter Chocolate Chip Cookies

My aunt was diagnosed with Celiac when she was 30 so my grandmother made this recipe for her. These cookies are addicting, even for those without a gluten intolerance.
Cream together 1 egg and 1 cup brown sugar. Mix in 1 tsp baking soda. Mix in 1 cup peanut butter (extra crunchy is good, but creamy works as well) Fold in 1 cup chocolate chips (mini work best and hold the cookies together) Roll dough into 1 inch balls and place on a greased baking sheet. Bake at 350 degrees Fahrenheit for 10-12 minutes or until golden brown.
Leave out chocolate chips for good peanut butter cookies as well.
