Tastes of Scandinavian Heritage: Recipes & Research

Introduction

Many paths lead to the study of the past, and food an be one of those paths, especially when the topic at hand is immigrant/ethnic history.  While many of us enjoy ethnic foods at family gatherings and while attending church, club, or community celebrations, we don't often think about just how and why these food traditions exist.  This collection of recipes and research examines the significance of Scandinavian recipes in families with Scandinavian ethnic heritage.  Contributors identified a heritage food item in a family with Scandinavian heritage (for most contributors, from their own family network), learned how to prepare the recipe, and investigated the personal, cultural, and historical significance to the family.

The project is the result of student work in the course Hist/Scan 317:  Scandinavian Immigration and Settlement at Concordia College (Moorhead, MN) in Fall Semester 2015.  We hope you enjoy exploring tastes of Scandinavian heritage!
