Vivian Mims talks about greens juice as part of the preparation for the first annual Urban Farm and Garden Alliance Greens Cookoff

 

Vivian Mims Green Juice- Vivian made her special greens for the Greens Cook-off; pot liquor was what came from her special greens recipe. All of her ingredients are useful; the juice from the greens are pot liquor for a home remedy to help/keep you get healthy.   
 

 

Vivian Mims Interview:

Vivian- “You don’t throw the juice away, that’s called a pot liquor. It will clean you out and help your cold..Don’t throw it out, it’s full of vitamins and nutrients.”

 Person reflection- Those who don’t have enough money for food probably isn’t able to go to the doctors whenever they need to either. If the community can make healthier food accessible at a cheap price, not only will it provide people with a full healthy meal but it will give you the vitamins and nutrients to prevent you from getting sick, and help you when you are sick.

POT LIQUOR: A SOUTHERN TIP TO SAVE NUTRITIOUS BROTH FROM GREENS

INGREDIENTS

    2 Tbsp bacon fat, lard or vegetable oil

    1 medium onion, sliced from root to tip

    1 ham hock

    2 garlic cloves, smashed

    1 quart chicken broth

    1-2 cups water

    8-10 cups chopped collard greens, about 2 pounds

    Vinegar and hot sauce to taste

1 Heat the bacon fat in a large pot set over medium-high heat. Sauté the onion in the bacon fat, stirring often, until the edges begin to brown, about 5 minutes. Add the ham hock, smashed garlic, chicken stock, and water and bring to a simmer. Cover and cook for 1 hour.

2 Add the collard greens to the pot and cook until tender, another 45 minutes to an hour.

3 To serve, fish out the ham hock, pull the meat off the bones and chop. Mix the meat back with the greens and serve with vinegar and hot sauce at the table.
