Combating Food Insecurity

The United States Department of Agriculture (USDA) defines a food desert as community where at least 33% of the census tract’s population must reside more than one mile from a supermarket or grocery store.” An estimated 23.5% of Americans live in a food desert, making this a major public health issue. With such a large population of people living in food deserts, finding access to fresh fruits and vegetables are essential to curb rates of chronic diseases. 
 
How to Grow Food at Home
 
Growing food at home can be an easy and affordable way to curb the food gap. Food can easily be grown in a home garden, but for individuals living in apartments this is not an option.
 
 
4-5 Inch Pots
 
Lettuce, radishes, chives, basil, cilantro
 
6-7 Inch Pots
 
Bush green beans, onions, Asian  greens, peas, kohlrabi, garlic, mint,  thyme
 
8-9 Inch Pots
 
Pole green beans, carrots, cucumber,  eggplant, fennel, leeks, peppers,  spinach, chard, parsley, rosemary
 
10-12 Inch Pots
 
Beets, broccoli, okra, potatoes, sweet corn, squash, tomatoes, dill,  Lemongrass, strawberries
 
 
 
1. Gather a pot or container of the correct size. Plastic buckets can be used, so long as holes are drilled into the bottom and a saucer or other drain pan is placed on the bottom. 2. Fill the container with potting soil. Dig a small hole, place seeds and cover with soil. a. For peas, pole green beans, cucumbers, peppers, and tomatoes require stakes to be placed in the soil. 3. Water regularly and place near a window with at least 6 hours of sunlight per day.
