Butternut Squash Soup
One-pot recipe
Seasonal Veggies: Butternut squash, apple, carrot, onion
Ingredients:
- pat of butter (about 1/2 a tablespoon)
- 1 dollop of olive oil (about 1/2 a tablespoon)
- 1 onion, chopped
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 green apple, peeled, cored, and chopped
- 1 butternut squash, peeled, seeded, and chopped
- 4 cups chicken or vegetable broth
- dash each cinnamon, nutmeg, salt and pepper
1. Heat oil and butter in pot
2. Finely chop onion, carrot and celery
3. Saute onion, carrot and celery about 5 minutes, or until soft
4. Peel,core and chop squash and apple
5. Add apple, squash, broth, and spices to pot
6. Simmer until soft (takes about 30 min)
