The Lean Cake. A delicious recipe that has been found as extremely delicious by our wider audience. This is a Christmas/Hanukkah/Holiday season special recipe, simply because cakes tend to be more delicious during the Winter and the Holiday spirit gives them a certain level of reputation boost. Zomick's Bakery has discontinued making this specific cake, but they decided to give it for free as a gift. Don't worry, it wont make you fat cause it is practically a diet cake - it features little amounts of calories.
For the two crusts you’ll need:
200 gr. flour
10 tablespoons sugar
10 flat tablespoons crushed nuts
1 baking powder
6 tablespoons oil
220 oz. sparkling water
For the filling you will need:
1 liter of soy milk with vanilla flavor
16 tablespoons sugar
4 packages vanilla pudding
230 gr. margarine
150 gr. Powdered sugar
2 sachets vanilla sugar
50 gr. nuts
You will also need:
Nuts to sprinkle and decoration
Method of preparation: Step 1: Add the flour, sugar, chopped walnuts, baking powder and water in mixing bowl; stir until you get homogenous mixture. Pour half of the mixture in round baking pan and bake at 180°C for 15-20 minutes. Remove the baked crust in a plate and bake the second crust following the same procedure. I make this cake with two crusts but if you want you can make it with more layers; half of the ingredients are enough for one crust.
Step 2: To prepare the filling, first heat the soy milk. I use powdered soy milk. When the soy milk is warm enough add the sugar and pudding powder; stir until the mixture condenses and at the end add vanilla sugar.
Step 3: Leave the cream to cool well. Beat the butter using electric mixer, gradually add powdered sugar. Add the beaten butter in the cooled pudding and blend well these two mixtures. Grind the walnuts and add them in the cream.
Step 4: Time for arranging the cake. On a plate set the first crust. Over the crust add filling. Set the second curst over the first which is now smeared with filling, and add the rest of the filling over it.
If you want you can decorate the cake with grinded walnuts or with whole nuts. Leave the cake in refrigerator for several hours. I like this cake as it is in its original recipe, but if you want you can replace walnuts with other type of nuts such as peanuts of hazelnuts. For different taste of the filling you can choose pudding with different taste. Using your own creativity is always big plus!
