Kansas City Barbecue

Arthur Bryant

As Arthur Bryant took over his brother's company in 1946, he did moved his business on 18th street and Brooklyn and it is currently in the same location today. At the time, Arthur Bryant's was four blocks away from the Municipal Stadium, home of the Kansas City Blues and then Kansas City Athletics. At the time, this restaurant became popular for those who attended ball games because this was the popular stop for fans to grab something to eat.  The marketing strategy that Mr. Bryant used was using happy hour for fans to stop by his restaurant which created a recolonized product for fans, celebrities, and athletes.

For example, Arthur Bryant's was quoted in Playboy Essay by Calvin Trillin, "The best restaurants in the world are. of course, in Kansas City. Not all of them; only the top four or five. Arthur Bryant's is the single best restaurant in the world." Between the Bryant's burnt ends, smoked brisket and the new signature sauce that Bryant created, became the turning point in the late half the twentieth century.
