Gluten Free Peanut Butter Chocolate Chip Cookies

Is there anything better than peanut butter and chocolate? Probably not. Even those who are baking-challenged will have no problem making these cookies. You might want to make a double batch because these are incredibly addicting; they'll be gone in no time!
 
  1. Cream together 1 egg and 1 cup brown sugar.
  2. Mix in 1 tsp baking soda.
  3. Mix in 1 cup peanut butter (extra crunchy is good, but creamy works as well)
  4. Fold in 1 cup chocolate chips (mini work best and help hold the cookies together)​
  5. Roll dough into 1 inch balls and place on a greased baking sheet.
  6. Bake at 350 degrees Fahrenheit for 10-12 minutes or until golden brown. 
Be mindful that these cookies fall apart very easily! When transferring to a cooling sheet, be careful not to break the cookie while warm (you can try keeping the cookie on the baking sheet for a while, but they tend to burn if you try this).

Leave out chocolate chips for good peanut butter cookies as well.
