Gluten Free Peanut Butter Chocolate Chip Cookies
- Cream together 1 egg and 1 cup brown sugar.
- Mix in 1 tsp baking soda.
- Mix in 1 cup peanut butter (extra crunchy is good, but creamy works as well)
- Fold in 1 cup chocolate chips (mini work best and help hold the cookies together)
- Roll dough into 1 inch balls and place on a greased baking sheet.
- Bake at 350 degrees Fahrenheit for 10-12 minutes or until golden brown.
Leave out chocolate chips for good peanut butter cookies as well.
