Coastal North Carolina: Recipes From the Archives

In this brief selection of recipes sourced from the North Carolina Collection at UNC-Chapel Hill's Wilson Library, I wanted to focus on the wide-range of options Coastal North Carolinians can choose from. While fish, shrimp, scallops, and oysters are a staple, and dominate the recipes in these community cookbooks; there are many other options and trends that are indicative of the times they were written. The Coastal Carolina cook book, the Ocracoke cook book, and Seafood cookery from Carteret County kitchens focus on seafood. However From Hatteras kitchens show us a variety of ways to make hushpuppies and corn muffins, a grain staple all over the state. Many times, as shown in Kitchen kapers, these community cookbooks not only teach us how to make dishes, but teach us how to buy and prepare our proteins. In this example, we see that meat is also a viable option in the North Carolina Coast. Finally, in the John W. Moore papers, we find recipes in a different form. While the manuscripts hold traditional recipes, they also hold cures and remedies. In all, Coastal North Carolina traditions, dishes, and recipes are expansive and not confined to solely seafood.
