She explains how she came to work at VMZ, and in the cafeterias in particular. She talks about becoming certified as a sous chef in the cafeteria and shares her memory of the particular dish she had to prepare for her cooking exam. She gives an overview of the different cafeterias that VMZ operated and which workers they served. She describes the typical dishes prepared every day, and describes her relationship to the head chef. She also comments on the closing of the cafeterias and food stalls, and also reflects on how the democratic transition has affected people’s job security and employment outlook.
