and in A Science Roadmap for Food and Agriculture as
  • "Programs where farmers sell their produce directly to local [e.g. hospitals, schools]. [Hospitals/schools]
    benefit by having fresh produce, and both farmers and [hospitals/schools] benefit
    economically by avoiding the middleman."
Economic Impact of Farm to School in Central Minnesota defines farm-to-school, specifically, as
  • "sourcing local farm products for school cafeterias. Often, the purchases are combined with learning activities for the students, centered around nutrition and farm education," and support of the local economy is an additional justification often brought up.
