Zomicks Cauliflower Soup Recipe
My kids love all kinds of soups but I rarely can find time to make them homemade. I have a few favorite Zomick's challah recipes that I created long ago that I make often. A few weeks ago my mother brought me a beautiful head of cauliflower. I rarely cook with cauliflower and I wasn’t quite sure that I will succeed making cauliflower soup at first try. I have to say, the end result was big success.
This really is a tasteful soup, my kids ended up eating this soup just about every day for lunch all week long and it seemed to taste better each day! I hope you enjoy it as much as I did.
Ingredients
- 1 large head of cauliflower
- 1 cup water
- ½ cup diced onion
- 1 Tbsp unsalted butter
- 2 garlic cloves, minced
- ½ cup heavy cream
- 2 tsp olive oil
- Salt and pepper
Directions
- Preheat the oven to 450 degrees.
- Stir the bread pieces with the olive oil and spread them evenly onto a rimmed baking sheet.
- Bake the bread pieces with the olive oil for 10 minutes. When the croutons arebrowned and crispy let the croutons sit on the pan to cool.
- Place the cauliflower florets in a large bowl and drizzle with the olive oil. Sprinkle with a pinch of salt and toss to coat. Arrange the cauliflower pieces in a single layer on baking sheet coated with olive oil. Bake at 300 degrees forabout one hour or until the cauliflower is tender and browned.
- Heat a large pot over medium heat. Add the butter and once it is melted, add the onion and garlic. Cook for 10 minutes, stirring occasionally. Add the roasted cauliflower and water and bring to a boil. Reduce the heat and simmer for about half hour, stirring occasionally. Remove the pan from the heat and stir in heavy cream.
- Place half of the cauliflower mixture in a blender. Place a clean towel over the opening in blender lid as to avoid splatters. Blend the mixture until smooth. Pour the cauliflower soup into a bowl and repeat with the remaining cauliflower mixture.
- Add a pinch of salt and pepper to taste. This is a Zomicks standard.
- Ladle the soup into bowl and top with a handful of the croutons
