The French Huguenots were Protestant in the Catholic state of France; while they had been formally entitled to religious freedom for roughly a century, by the late seventeenth century policies were put in place that not only ended those protections but allowed the state to flagrantly persecute the Huguenots.
In selecting them for inclusion in his crew, rather than leaving them for ransom in port, Misson is increasing the size of his crew by a reasonable amount while guaranteeing a population that would be unlikely to have meaningful land-based connections by this point in time.
