There are many types, but three are most notable (Fandom.com, 2023).
1. Runners:
These type of Infected move very fast and make awkward and misguided attacks. They are first that Joel and Sarah encounter, and are quite easy to avoid if the defender swerves out of the way.
2. Stalkers:
These mark the stages after the Runners, in which the Infected begins losing eyesight and become more aggressive. They are capable of using stealth to hunt down their target, hence their name. Avoiding these requires heightened awareness and stealth in both audio and visual manners.
3. Clickers:
These mark the stages after Stalkers, in which the head of the Infected becomes fully enveloped by the fungi, such that the host has no ability to see. At this stage, they can only hear (very precisely) to track down their target using some mechanism similar to echolocation (which requires clicking to perform, hence their name). These require only audial stealth to avoid, as long as no sound are made near it. Once there is some sort of accident or incident, the defender may start running, making their location quite obvious at that point, such that it is difficult to get into stealth again. These are the ones which Joel and Ellie encounter in the Boston Museum.
As can be seen, there are a variety of Infected which Joel and Ellie encounter throughout the game. The way that they act requires stealth (for the most part) to avoid, thus making up why The Last of Us is a go-to example of a stealth horror game. The concept of making these enemies humans that are corrupted by nature (fungi) contributes to the idea of "nature taking back" as is often explored in eco-horror media, as the hosts of the fungi become victims to the fungi, rather than the typical theme of humans being an oppressive force against nature.
