Onion & Pepper

These are recipes that contain either chopped onions or bell peppers—or both. My grandmother used to buy these items in bulk, dice them, and store them in the freezer in individual-use-sized bags. One of my favorite memories (and I think this is true of all of my siblings as well) is of her placing a tiny, ancient cast iron skillet on the stove and dumping one of these bags into it with a knob of butter. Once the peppers and onions were cooked through, she would add an egg or two, quickly scramble it, then remove the pan to the kitchen table where she would eat her simple breakfast directly from it. By way of comparison, my grandfather generally had a full spread of bacon, eggs, toast, and stewed prunes served to him in his rocking chair.
