You can immerse yourself in the world of pelmeni at A Real Batch, a trendy café in downtown Irkutsk where customers can watch the dumplings being made. The pelmeni come in several hues; natural products added to the dough change its color without changing the flavor. The fork in the cafe's logo imitates a hand gesture that means "You're cool." Tables are adorned with humorous sayings invented to celebrate the dumpling, and even the bench cushions are shaped like the plump potsticker. Boiled and served fresh, the pelmeni can be flash-frozen for take-out.
