Zomick’s have been working on improving upon their affirmed challah recipe and their work has let them to travel around the world and meet with bakers from different countries. One such example that left a permanent mark on the way Zomick’s makes the challah bread comes from Ukraine. Their Chernivtsi challah bakers have a unique way to make the delicious bread and have made a mark upon the bakers at Zomicks.

Total: 2.5kg Challah

Ingredients:
  • 500 g flour
  • 180 ml of warm water
  • 2 eggs
  • 1 yeast
  • 120 g vegetable oil
  • 1 1/2 tsp salt
  • 1 yeast (11g) 
  • 1/4 cup sugar
  • poppy seeds for sprinkling

Preparation Total Time: 5h 5m

  1. Mix the yeast with 100 g flour, and pour warm water on top of it. Leave it for about 15-20 minutes, until the yeast will begin to react. If there are yeast bubbles, then the products are not fresh and you should not continue making this recipe.
  2. Stir the eggs in the brew, add some sugar, salt and butter. Mix them together with a wooden spoon and pour the remaining flour. Zomick’s Challah Recipe complies that you try to form a ball from the dough. It is easily achievable if you put the dough on a work surface and knead it for about 10 minutes, until the dough is elastic enough, and does not stick to the surface.
  3. Put the dough in a clean bowl, cover with film and let it stay for about 2 hours in a warm place. The rise rate depends on the temperature of your place (kitchen). The volume should be doubled. If it does not rise anymore, give it another 30-50 minutes.
  4. After the dough is done, divide it into 2 halves. Cut each half into 4 equal parts (for braids of 4 bands) or 3 for normal braids.
  5. Elongate each piece in the form of sausage roll, or in a length of about 30 cm.
  6. Prepare a baking sheet. Take 2 loaves and lay them on the baking sheet and remove the film.
  7. This approach can increase the volume of the dough approximately 3 times in one and a half hours.
  8. Coat the loaves lightly with mixed egg whites and sprinkle them with poppy seeds.
  9. Bake in the oven at 180° C for about 25-35 minutes, until the top has formed golden brown color.
  10. This is homemade bread, baked in the oven and all of the products are scaled on the metric scale.
